Quick, Cheap & Good Green Beans

  • 1 can french cut green beans (undrained)
  • 1T dried minced onion
  • 1 beef boullion cube

Bring all items to a boil & simmer till you are ready to serve.

Turkey Salad

…because you know you have some left over.

 

  • 2 cups shredded turkey
  • 1/2 cup Miracle Whip (salad dressing)
  • 1/2 – 3/4 cup Hellman’s (real mayonaisse)
  • 1/3 cup diced celery
  • 1/3 cup diced sweet or bread & butter pickles
  • 1/2 cup shredded cheddar
  • 1/3 cup onion diced
  • seasoned salt to taste
  • pepper to taste

Eat on crackers, bread or with a fork.

Gourmet Mashed Potatoes,

This is another fairly simple recipe, and is easily adjusted, as well as a huge hit around  my house.

Peel and rinse potatoes, cut in to pieces, I usually slice each potato in 3-4 pieces, depending on size, if using red potatos, I would just halve them, this is simply to make them cook faster. Place potatoes in a pot, and cover with water, boil until soft when poked with a fork. Remove from heat, and drain, placing back into the pan, the residual heat from the pan helps get a bit more moisture from the potatoes. Add about half a stick of butter and mash. Add sour cream and mix in, until potatoes are right consistancy (basically, you are using sour cream instead of milk here.  Salt and Pepper to taste. Add shredded Cheddar cheese and mix in heat if needed and serve.

Sweet Potatoes

This is one of our simplest recipes, it is really super easy, and my kids beg for it, they love it.

First you wash and cook your fresh sweet potatoes, there are several ways to cook them, you could bake, boil or steam them, I usually boil them, but have also put them in the microwave and baked them. once cooked you skin them, the thin skin just peels off, but be careful because they are hot. Once skinned you add a bit of butter (to taste, we usually use about half a stick for 5-6 sweet potatoes) and mash them. I prefer to mash by hand, but a mixer works fine. Once they are mashed, mix in about half a cup of brown sugar and smooth in to a casserole dish, dot top with small pieces of butter (about 2-3 pats worth.) In a separate, small bowl, mix together about 1/2 C. oatmeal, 1/2 C brown sugar and chopped pecans, sprinkle over top of casserole, sprinkle with a few mini marshmallows (I let my children make a face or spell out a message.) and bake at 350-375  until hot all the way through and marshmallows are gooey. Serve hot.
